Wood Country
It got a one-off mention in the manga regarding the group that attacked Danzo. Plus, there's that "Forest Country" from filler anime. So I had the brilliant idea of taking that country to the immediate northeast of Fire Country (that country with two asterisks in it), and calling it Wood Country. See, it used to be two separate countries, formed out of Fire Country land due to the treaty ending the First Great Shinobi War. One was Wood Country, and the other was Forest Country. In the years between the Kyuubi attack and series start, the two countries merged under the Wood Country name. I claim each asterisk actually denotes the capitals of the countries. Not sure which is still the capital now though. :D
Moon Country
I'm thinking of placing this tourist and gambling country just southeast of Sea Country. The two "unclaimed" islands in the bottom left corner of the Elemental Countries map is part of Moon Country. Hm, I could also make the two "unclaimed" islands above those also part of Moon Country, with the actual crescent moon shaped island that's the main part of the country just off the map to the right and also slightly to the bottom

Bird, Rain, River, Grass, and Waterfall Countries were nearly all the other countries formed out of that treaty. Left unnamed so far is one more country between Lightning and Fire, and one between Wind and Earth next to Bird Country. The ocean is considered a good enough "buffer," so Wave, Whirlpool, and Tea weren't formed at the same time. Iron Country actually formed during the 1GSW and gained its neutral status by mediating the end of that war years later. Rice Field Country seceded from Iron Country between 2GSW and 3GSW. Snow Country formed in 39 AF (and the coup that sent what's-her-face out of country to become an actress occurred in 71 AF).
Maybe Valley Country is the one next to Bird Country (and Mountain Country would be the one northwest of that, also sharing a border with Earth Country)? And Sky Country for the one over by Lightning Country?
I think of the treaty ending the First Great Shinobi War as sorta like the treaty ending WWI, where a bunch of new countries were formed out of various nations' territory.

And just think, once we get those last 2-3 countries named, the Elemental Countries will have been "mapped" except for a few islands here and there. :o
Oh, I added a nations-villages time line to the timeline spreadsheet. Mainly tracks major multi-national political events, country and village formation/destruction, and the like. I think Tea and Sea Countries and the five great countries are the only ones without a formation year at the moment. Well, them and Demon plus Marsh.
